The recipe calls for about 5 14 cups of it and I was thinking I could just use cheddar. Gruyere is a Swiss cheese known for its nutty profile. Since American cheddar has an entirely different taste profile and melts too fast try another European cheese as a replacement for Gruyere one which may be easier to find in the grocery store or may carry a lower price tag.
